Recipe of the Month - Asian Meatballs

I know, two recipe posts in two days! Sometimes I cook to avoid thinking about real life, cause real life sucks sometimes. 

Tonight I made Asian Meatballs, which is a spin off from one of my favorite burger recipes. 

Into a mixing bowl:
- 1lb of hamburger meat
- 1/2 c. Panko breadcrumbs
- 1 diced jalapeno
- Small diced shallot 
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 crushed garlic glove
- 1 tbsp fresh ginger


Mix it all up - try to not think about squishing raw meat between your fingers. Pat on the back for me, I made 12 evenly sized meatballs. Dicing skills could use some polishing. Bake at 375 for 20 minutes.


I know the below picture does not look as appetizing as it should, but I promise it was delicious. Made some brown rice following package directions with fresh squeezed lime juice. The sauce, which is not a blob of Pepto, is plain Greek yogurt mixed with Sriracha sauce. It's my personal favorite, to put on everything.

Recipe of the Month - Spicy Chicken Nachos

Recipe of the week seemed too ambitious. And biweekly, who does that?

I like to cook. I'd love it if I never had to cleanup afterwards.

This weekend I tackled one of our favorites, Spicy Crockpot Chicken Nachos. 



Into the crockpot on low for 6 hours:

- 4 skinless chicken breasts
- Lots of dashes of garlic powder to taste
- Splash of Worcestershire Sauce on each chicken breast
- 1 shallot chopped into large pieces
- 1 red bell pepper chopped in large pieces




After 6 hours, shred the chicken with two forks (ladle out any excess water), and add your favorite buffalo sauce. Let sit on low for 30 more minutes.

Spread over chips, add some bleu cheese dressing, and since I like everything spicier than my fiance, I added fresh sliced jalapenos on my plate.




Easy Sunday night dinner.

Eat the cake, Anna Mae

I was jamming out to Beyonce's Drunk In Love this morning, and always get real excited when Jay-Z comes in and is all like, "now eat the cake, Anna Mae, said eat the cake, Anna Mae." I was pretty confident I was making up hearing Jay-Z speak directly to me so I decided to look up the official lyrics. Turns out, that's the exact lyric, and it's the exact lyric because it's Tina Turner's REAL name. Wait, hold up. I have the same name as Tina. That's really all I need to know for a Tuesday.

Maybe my dad has something in common with Phil Dunphy. Look who he obviously named me after...

Who Cares

Two days ago Amazon was having a deal on Adobe Photoshop Lightroom 5. It was 67% off or some silly number like that. I don't own a fancier camera than my cellphone, nor do I have a personal computer outside of my work laptop. I do have too much free time though and think stories are best told through pictures so I bought it. And then I started a blog. The end.
